VEGAN CRUSTLESS QUICHE
Adapted from JUST EGGS RECIPES
PREP TIME: 15 MINUTES
COOK TIME: 40 MINUTES
TOTAL TIME: 60 MINUTES
ingredients
1 bag frozen broccoli (10.9 oz)
½ cup chopped leaks
½ cup chopped scallions
1 large carrot peeled and diced
½ package Follow Your Heart Cheddar Shreds (4 oz)
1 container of Just Eggs (12 oz)
Salt and pepper to taste

Preheat oven to 350॰.
Microwave the frozen broccoli. While it’s cooking, sauté the leeks, scallions and diced carrots in water until soft.
In a large bowl, combine the vegetables, cheese shreds, an entire bottle of Just Eggs and salt and pepper to taste.
Pour into baking dish (I used a pie plate). You can use an 8x8 baking dish.
Bake for about 40 minutes until the quiche is lightly browned and firm.
Let rest for about 5 minutes before slicing into it.
I make my version Low FODMAP so I used only the green parts of the leeks and scallions. I always use Follow Your Heart Cheeses. And I always use more cheese than the recipe calls for! So feel free to add more cheese (or veggies for that matter) as well!
