Tropical Cauliflower Rice – RAW

I am so happy to say that I now belong to a Organic produce buying club!  I put it off for a couple of years because I heard many horror stories about them.  Some of the bad things that I heard were:

  1. Produce substitution
  2. Not knowing what to do with all the different types of fruits and veggies
  3. Produce rotting
  4. Very expensive

Those reasons alone turned me off to the concept of paying for a bi-monthly delivery of organic fruits and vegetables.  Then one day – an opportunity came knocking at my door and I decided to jump in head first and sign on.  Endlessly Organic is a local company who partnered with my daughters company to use them as a base to deliver their fruits and vegetables every other Wednesday of the month.  I checked out their options and their prices and decided to give it a try.  If it doesn’t work out, I can always cancel.

What I love about Endlessly Organic is that they have a GREAT Website and share recipes for that week’s produce on Pinterest!  Makes everything so easy!  I get so excited when my box arrives!  I love unpacking the bounty and looking at the beautiful colors of the produce and quality of  it.  Even when I receive a fruit or vegetable I rarely eat or know what to do with . . . I know that I’ll figure something out.

So, in last weeks box, I received a beautiful medium sized organic cauliflower.  I put it aside and knew that I would make a RAW Cauliflower Rice.  I used only ingredients that I had laying around my house and this is what I came up with:

Raw Tropical Cauliflower Rice

1 medium head cauliflower (I used organic – you can use what you wish) washed

Juice from 1/2 Lemon

2-3 tablespoons olive oil (omit if you don’t want the fat)

1/3 cup diced cucumbers

1/3 cup diced fresh pineapple

3 Tablespoons  dried cherries (I used Trader Joe’s)

Break the cauliflower into florets and pulse in food processor using the “S” blade.  If you don’t have a food processor, you can grate it using a grater.

Mix all the ingredients together and Voile!  You have Tropical Cauliflower Rice.  Use it as a side dish or a main!

Go wild and experiment with different fruits and vegetables.  Be daring!  And always remember one thing . . .

No matter what you do, whether it works out or not, the one thing you must ALWAYS do is . . .
