Cold Sesame Noodles – NOT!!!

Cold Sesame “Kelp” Noodles with Spicy Thai Almond Sauce

Today, for lunch, I made Cold Sesame Noodles in Peanut Sauce — my way!  Basically, there are no pasta noodles and no peanut sauce.  The noodles are actually kelp noodles

and my “peanut” sauce is made with “almond butter” instead!

I made my recipe with vegetables that I had in the house.  You can incorporate any vegetable that you’re in the mood for as well.

Ingredients for Cold Sesame Noodles
Chopped Vegetables

Cold Sesame Noodles in Spicy Peanut Sauce

1/2 Cup Almond Butter

1-2 Cloves Garlic minced

1 inch Fresh Ginger minced

1 TBSP Rice Wine Vinegar

1 TBSP Tamari (or soy sauce, Braggs liquid Aminos, Coconut Aminos,  Namu Shoyu)

1 TBSP Sesame Oil

1/8 tsp Chile Sauce (or more or less to your liking)

Water as needed to make sauce creamy (I used 2 TBSP in this recipe).

Vegetables — I used red pepper, yellow pepper, carrots and celery.

1 Package Kelp Noodles rinsed and drained


Combine the first 8 ingredients and stir (whisk) until creamy.  Dice your vegetables and toss them in with the Kelp Noodles.   Pour the sauce over the noodles and toss to incorporate.  That may take a little time and patience because the sauce is a little thick.  I used 2 forks to do it.  Eat and Enjoy!!!
